A company called Texet Multi-Systems has a software package called Applparlour
is a =supposed= 7 user multi-user BBS system.. I assume that this product
actually exists.. It is not a GS specific product; It's advertised to run on a
"64K Apple II/+/E" so I can only assume that it runs on the IIGS.
  
Another product, designed to only be a "Conference System" is available. It
only works with Apple-Cat modems (slighty out-dated.) It's called
Diversi-Dial. It also supports up to 7 users.
