Did I here someone ask for potato soup ? This is one of 
our favorite soups.  Quick to make too.

Saturday Potato Cheese Soup
(based on recipe in The Thrifty Cook by Nell Nichols)

	2   cups cubed potatoes
	1   cup water
	1   tsp salt
	1/8 tsp dry mustard
	1   pinch pepper

	4  slices bacon chopped
	1/3 cup chopped onion

	1 1/2 cup lowfat milk
	1  cup shreaded cheddar cheese
	1/2 Tbl parsley

Cook potatoes in water with salt, mustard and pepper
until soft; Do not drain.  Mash the potatoes.

Cook onions and bacon in a saucepan until bacon is browned 
and onion is soft.

Add potato mixture to saucepan along with the cheese and milk.
Cook over low heat until warm but do not boil.

Makes about a quart.
