I had a quick look at one of the books I've got and it says nothing about
the posters being a later addition. What exhibition was that done for?

Ralph McQuarrie (who died this month) did A LOT of concept art work for
George Lucas, some of it before the script was even fully written. Some of
that artwork included movie posters and imagery used on the early posters.
The "Star Wars" novel was also released well before the movie.

It's mentioned in Sculpting the Galaxy, the model for the Tantive was
being restored to how it looked in ANH since it had been modified for
RotJ (used as a generic blockade runner). It was going on display, and
I think it was for an exhibition, but I may misremembering and I don't
have the book here to double-check. So they repainted it and mended
broken parts. That's when the posters were added.

The original Star Wars poster was made by Brothers Hildebrandt, not
McQuarrie:
