No, I haven't seen or heard of such an app; but it sounds like it is
possible and would certainly be neat. If anyone does it and wants to 
distribute the schematics + source freely, please do so!

There are also some third party products that will do what Dave wants:
The Metaresearch "Digital Ears," Ariel's "DM-N Digital Microphone,"
and Singular Solutions "A/D64x Analog/Digital Interface." All allow recording
16 bit, 44.1 kHz stereo samples through the DSP port; the A/D64x also allows
capturing data from the digital output of CD and DAT players.
