Rob Peck's Programmer's Guide to the Amiga, Sybex, 1987 is the best.
If you're really serious, buy the Addison-Wesley manuals and call Amiga
to become a developer.

Some magazines are good too.  Try the early Amiga World's, but especially
Amiga Transactor.
