I don't know how you could put text into headers and footers using a style; but you can define the header and footer styles which will automatically be used in a new document. The "built-in" styles "header" and "footer" are applied to headers and footers when you create them; if you modify them and click "set default" in the Define Styles window, they will be stored as your new defaults in your "Word Settings" file.
