I've used Statview II to do polynomial regression analysis (quite a bit).
I also used the precursor program Statview 512+, which runs a bit slower
and has fewer of the more esoteric features.  I found that Statview is
great for preliminary analysis because of the fast turnaround, but preferred
another package for drawing graphs---Trapeze.  This program is great for doing
scatterplots and histograms in particular.  It has polynomial regression
functions as well so that models can be regenerated rather than having to 
import the data from Statview.  The graphs can be customized to a great
degree.  If you have any background in linear algebra, you'll find
Trapeze is a very intuitive program to use compared to other spreadsheets.

I admit to being a very satisfied customer of both the companies producing
these programs, particularly Trapeze which I have found to be extremely
versatile.
