Summary: press - point - release

On the Mac (which I too have) you point to the menu item at the
top; press to bring it down, point to what you want; release to
select.  The Flight simulator is VERY different: point; click; 
point; click (a 2nd time to finally select).  This is very
foreign to me, and what I was TOLD was the way GEM does it.  Since
I don't have an ST (yet) I relied on what I thought was a correct
association with the way GEM does it.  If GEM doesn't do it
that way, sorry, but it is still weird regardless.
