I only have two minutes to post this.  I just read the interesting 
bibliography of string quartets on this newsgroup.  Some interesing examples
were left out, namely, quartets by:
Mahler and Bruckner (yes)
Delius
Frank Bridge
Britten
Nielsen (wrote 4, I think)
Shostakovich (wrote ~12 excellent quartets, not just one)

There is an excellent, new recording on London of the Sibelius and Delius
quartets.  The Fitzwilliam Quartet has recorded all or most of Shostakovich's
quartets on l'Oiseau-Lyre and they are great recordings.
