Summary: 

In terms of alternate versions of various films, I know of 2 that are
quite noticeable.

In National Lampoon's "Vacation", the scene where Chevy Chase stops
the car to ask for directions in the red-light district has been totally
replaced.  The man he asks, instead of spewing obscenities, simply
comments sarcastically "What do I look like, Christopher Columbo?"

I was also informed that the videocassette of Blade Runner contains
various scenes of bloody violence that were edited from the actual
theater release.  I'm not exactly sure which ones, but I'll find out
shortly...
