If you don't mind working with filo dough, you could make
sphanikopita (I've probably spelled it all wrong) -- see the
NYTimes Cookbook, or I think there's a recipe in the Vegitarian
Epicure.

If you're in a hurry and have a food processor, make humus (spelled
many ways).  I'm not sure this is authentically Greek, but it's close
and it's good.  I'm sure there's a recipe in the Veg. Ep.

If you have a lot of time to kill, make stuffed grape leaves
(dolma or domalthes, your spelling may vary.)
