Here's a good way to dispose of some killer zucchini:

1/4 c. soft margarine
1/2 c. oil
1 3/4 c. sugar
2 eggs
1 t. vanilla
1/2 c. sour milk
2 c. finely chopped zucchini
1/4 to 1/3 c. chocolate chips
1/4 c. chopped nuts

2 1/2 c. flour
4 T. cocoa
1 t. baking soda
1/2 t. cinnamon
1/2 t. cloves
1/2 t. salt

Cream margarine, oil, and sugar together.
Add eggs, vanilla, and sour milk;  blend thoroughly.
Sift together the flour, cocoa, soda, cinnamon, cloves, and salt.
Blend with the creamed mixture.
Stir in the zucchini.
Spoon into a greased 9x13 cake pan.
Sprinkle with nuts and chocolate chips,
Bake at 325 for 40-45 minutes.

NOTES:
1) 1 T lemon juice to 1/2 c. milk works fine for the sour milk.  Let it sit
   for 5 or 10 minutes.
2) Grated zucchini works fine.
3) I've never added the nuts and it's still good.
4) I prefer to mix the chocolate chips into the batter.  I have chopped up
   those 50 cent size Hershey bars and it turns out OK.  I've even left them
   out with no problem.
