     A number of years ago I lived in Italy near the Italian Jewish
ghetto in Rome.  The Italian Jewish community is very small in Italy
but they have fiercely kept their traditions and  their culture
alive since the Roman times.  One of the interesting things about
their culture is their cuisine which is quite unlike that of the
catholic community which is the most predominant.  I consider
this cuisine definately authentic because it is the oldest cuisine
in Europe.  It dates back to the Roman era.  Alot of the food has
Middle Eastern - like ingredients that they have learned how to
cultivate over there.
     Up to a few years ago, I searched heavily throughout the U. S.
for any cookbooks that had Italian Jewish cuisine.  It was futile until
I came across a bookstore in Seattle that had such a book.  Much to
my surprise, it contained recipes for a few of my favorite dishes.
     If you want authentic jewish cuisine, I suggest the book
Classic Cuisine of the Italian Jews by Edda Machlin.  Sorry, I
don't recollect the name of the publisher off hand.
