This isn't muffins, but if you like the taste of corn, you'll like
these.  They make a nice cheap main dish.

                     CORN FRITTERS

Take 1 can (1 lb.) of corn, drained.  It's even better to use fresh corn 
(removed from the cob, of course), but it's not always available, and canned 
is ok.  Beat 2 eggs until light and add to the 
corn.

Add:      6 T. flour
          1/2 tsp. baking powder
          1/4 tsp. salt
and mix.

You may add 1/8 tsp. nutmeg if you like nutmeg (I don't).
Drop by tablespoonfuls into hot oil and fry until golden.


My mom considers these a form of pancake and eats them with syrup or
powdered sugar.  I'm not a sweets fan, and like them naked!
