Not exactly a recipe, but peel (or not) apples, preferably
a combination of varieties, put in a pot with just a bit of
water, and simmer until they get mushie -- stir to get the
consistency as fine as you like (i prefer it a little
chunky myself) and add honey or sugar if you like, also
a little cinnamon and nutmeg is good.

when i don't peel the apples, i have found it is a good
idea to grate them.  in that case, add just the tiniest
amount of water and simmer rather briefly -- otherwise,
one ends up with big hunks of mushie appleskin, which
is less than appealing.

i also like to make escalloped apples, which is about the
same thing, only you put quartered apples in, sprinkel
with sugar or honey and cinnamon and nutmeg and bake or
microwave until tender.

one of the great dishes of my youth was what my grandmother
called "bird's nest" -- basically, just an applesauch cobbler
(take warm applesauce, put in casserole, drop a soft biscuit
dough on top, and bake).  serve warm -- good with cream or ice
cream, but my favorite is still the old milk with sugar and nutmeg.
