Lines: 28 > Anyone have a recipe for Applesauce ? Easy as cake.... easier! Quarter as many apples as fit into your (covered) pot. Add a few tbsp water (just enough to get them started - they will render water soon that you will have to cook out) and cook on med to med hi covered, stirring occaissionally until mushy. Put through a food mill (one of those cylindrical collinder affairs with the handle in the middle - you can get one for < $10 and it is also usefull for several other things) into a large bowl, then return to emptied pot. Cook on med hi, stirring until the consistency is right. Add any, all or none of {nutmeg, sugar, honey, cinnemon, cloves, allspice, ginger} (personally, I prefer just a little ginger, cinnemon and nutmeg - very little). Put a spoonfull in a bowl and let cool a bit to check both water content and seasoning. If you continue to cook it way too long, then you get applebutter, another treat (some people add real butter to their apple butter, but not me). This whole deal can also be done with pears, and it is really delicious! The pear butter, especially. It is a bit grainier than apple, but wow what a taste!
