Also from net.cooks was the suggestion of the cookbooks "The New York
Times 60-min Gourmet" and its sequel ("More ...") by Pierre Franey.
I bought the first of these and it has a lot of easy-to-prepare main
dishes (especially a lot of chicken and fish dishes).

I find myself motivated to make a "real" dinner about 2-3 times a
week.  But since most recipes serve 4, I manage to get by on
leftovers the rest of the time.  When this doesn't work out, I usually
fall back on something like spaghetti, which is easy to whip up.
