This really isn't as hard as it sounds, especially if you buy packages of fruit pectin. This makes the whole process almost fool-proof. A few years ago, my neighbor had green apples falling all over her lawn. She didn't want them, so I took them and made jelly. It was very good. Her apples were bigger than one-inch, but I don't think it really matters. Another thing to do if you don't think the taste would be too strong, since the apples are not ripe, is to add some ginger to the jelly. This is also delicious. I hope you can use this suggestion.
