I always use an electric mixer (ah, an electric egg beater.  ah, what
do you call these things...) to mash potatoes.  As for the peels,
everybody knows about baked potatoes, right, with the innards
scooped out and about a tableeespooon of butter melting in each
half of the potato skin.
