You are probably lucky it grew the white stuff.  Oyster sauce does
contain liquid from shellfish, as its name suggests.  (Or at least
it should, if authentic.)  I suspect it could grow some very nasty
bugs that wouldn't show up so easily until they hit your tummy.  I 
was told to always refrigerate it after opening.
