Where foods/spices are unavailable substitutes are suggested. Another feature of this book is that there are recipes from a wide cross-section of the Indian landscape, provided by Women from respective parts of India....which is about as authentic as you can get! Finally, for the diet/protein conscious amongst us, there is a chapter on nutrition information for basic ingredients in Indian cooking!
