[ let them eat cake ]

By popular demand here is the recipe for the Amish Cake
that I brought in on Monday.  Many have asked about it
so here it is:

		Amish Cake

2 eggs, beaten slightly	
2 cups  sugar
2 Tbsp  vanilla
1 can   crushed pineapple (~2 cup size - with juice)

	Mix together and add:

2 cups flour
2 tsp  baking soda
1 cup  chopped walnuts

	Bake in 9x13" cake pan(ungreased) at 350 deg.
for 45 minutes.  Cool and frost with:

		Cream Cheese Frosting

1 - 8oz.   pkg cream cheese (room temp.)
1/4 lb.    margarine
1 tsp.     vanilla
1 1/2 cups confectioner's sugar

	Cream together until smooth and creamy.

	- Enjoy, but in moderation - it's rich!
