In the latest issue of KEYBOARD magazine I noticed an ad
from a company that does MIDI conversions for old Hammond
B3 organs.  I've noticed ads in the past for MIDIfying Rhodes
and acoustic pianos.  

You may also want to try contacting J. L. Cooper Electronics
out in California -they market MIDI kits for older synths and they
may be planning something for more traditional instruments as
well.
