Thanks to all who responded: I've been on vacation and so haven't
replied.  Including email there have been about 25 separate opinions
offered.  As I expected, there are a number of differing views on 
the subject.  It has all been very helpful although I am still trying
to make sense out of some of it....

There seems to be very little consensus regarding SETS of cookware;
although more people prefer the Cuisinart over the Calphalon, there
were many different reasons given for the preference.  

Everyone agrees that there is a (more or less) ideal pan for any given 
purpose.  I have decided to pursue cookware with that philosophy in
mind, not buying a set, but buying pans on an individual basis.  Again,
thanks to all.  If anyone would like me to mail them ALL the replies
I recieved, let me know by mail and I'll do my best.  If you have 
already asked for this --> it's on the way.
