If you splash cold water on a hot engine block, the water can cause different cooling rates between the block and head, possibly opening up a gap in the gasket, and possibly even warping the head surface. Next time you drive past a large puddle, look for those cars with lots of white water vapor coming from their tailpipes. Personally I go around the large puddles.
