I would suggest that you convince her to get a real bike if she doesn't 
have one already.  In Dallas, you should be able to ride outdoors for a
large part of the year.  For the bad days, rollers or a turbo trainer
would provide a way to workout.  I think you can improve your health in
more than just the physical way by taking to a quiet country road.
