Procesors don't work all that well for a gateau, either.  They produce a
mealy-textured result (perhaps caused by oil leaching out) and will turn
most nuts to butter before turning them to a usable flour.  One of the
ultra-expensive mail-order cookware places sells a device to turn nuts
into the appropriate flour; it runs about $70 though.

If you are making a gateau with almonds as the "flour", it does help to
start off with slivered ones; the smaller the processor input, the more
uniform the result.
