For example, I was taught that treating bird flesh like mammal flesh with respect to Kashrut was initially a "siag" (fence), and since tradition becomes law, so to this became law. With respect to Hebrew... Hebrew is the language of Israel, so you speak it as they speak it in Israel ... like Sephardic.
