Relay-Version: version B 2.10 5/3/83; site utzoo.UUCP Path: utzoo!watmath!clyde!burl!ulysses!mhuxl!ihnp4!inuxc!pur-ee!uiucdcs!uiucuxc!usadaca From: usadaca@uiucuxc.UUCP Newsgroups: net.cooks Subject: Re: BBQ ribs - (nf) Message-ID: <5975@uiucdcs.UUCP> Date: Thu, 1-Mar-84 22:41:05 EST Article-I.D.: uiucdcs.5975 Posted: Thu Mar 1 22:41:05 1984 Date-Received: Sat, 3-Mar-84 09:33:24 EST Lines: 38 #R:ihuxk:-57300:uiucuxc:2500015:000:1997 uiucuxc!usadaca Mar 1 11:45:00 1984 you want ribs?!?! here's my homegrown method for making the best eating there is ( well, of, maybe the 2nd best )... get some ribs, preferably country style ' cause they have more meat. get some sauce. i usually buy a bottle of everything being offered get some fresh onions bermuda preferred. get some fresh garlic. go home. mix all the sauces together. slice the onion into rings. get a big cake pan, rectangular, or any deep sided oven proof container. at this point, you can, if you want, par-boil the ribs to remove fat. i just trim mine down with a sharp knife. in the pan or whatever, put in a layer of sauce about 1/4 inch deep. then a layer of ribs, then a layer of onions. oops, forgot a step....when you mix sauces together, peel garlic, squeeze juice into sauce, toss remainder of garlic pulp into sauce and mix well. now, back to the layers...keep layering until you almost fill pan.next to last layer must be onions. pour on sauce, until whole thing is swimming in sauce. get some brown sugar and sprinkle over top. how much? depends...enough to counteract overly tart sauces, not so much as to make it on the sweet side...just a nice balance. put in 350 degree oven. go watch ball game, mow the yard, shovel snow, whatever...for about 2.5 hours...if top layer has not cooked down and gotten thick and crusty, cook some more. (personally, i dig the bottom layer of ribs out and put them on top to get sauce baked right on just like top layer. by now, the aroma will be driving you crazy, the neighbors will be lined up with plates in hand and it's time to eat. unless you want to share, lock the door and get something to drink. if you want, get corn on cob and all thaty other stuff, too. me, i just eat ribs, lots and lots of ribs. this method is gauranteed to cook the meat off the bones and will give you yet another reason to clean the oven. btw, you can use pork chops instead of ribs. liquid smoke or hickory flavoring can also be added. depends on your taste.
