Because so many people who should know how to make Irish coffee, don't.
I have had everything from milk in it to cool whip on top.  Even though
I am not Irish, here is my receipe which I understand is authentic.

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Heat an Irish coffee glass.  Pour in one jigger Jameson Irish Whiskey,  
three cubes sugar, and fill with strong coffee (to one inch of the top).
Float on top slightly whipped cream.  Do not stir after cream has been
added.

And, just in time for St. Patrick's day!
