I would normally agree with you; I would usually rather make my own hot sauce. But I grew up on the Mississippi Gulf Coast, and what we called "hot sauce" was actually the trademarked "Tabasco Sauce" made in Ilhenny, Louisianna. This is made from a blend of peppers and is aged in kegs for ?3? years (possibly even 5 years, I don't remember). I have found that it almost everything I cook, from omelets to steak to simple dinner vegies. It has a rich, full flavor and is VERY hot. It is difficult to find here in North Carolina, but not impossible. I cannot tolerate "Texas Pete" and the other aberrations that North Carolinians deign to call "hot sauce"; if that is all that the writer of the original article bagging hot sauce has been exposed to, then I don't blame that person one bit!!!
