      It's a lot easier and a LOT faster if you have a 0-220 deg
thermometer and set the oven to the desired temp. It will only take
about 20-30 seconds to get an oven to 75-80 deg, and about 10 seconds
every hour or so to keep it there. It is important not to have too
hot of an oven, and 95-100 deg is too hot for a controlled , moderate
rise. Why guess, a cook should have a good thermometer anyway. The kind
sold as microwave thermometers are the type I have seen (0-220), very
fast acting (30 seconds), and accurate. They can be found by MICROTHERM
for 6-8 dollars.
