I disagree about sharpening since, in family situations, it is virtually
impossible to control knife usage.  There is an excellent system for
putting a PERFECT edge on just about any knife.  It is called "Razor Edge"
and is made by an outfit in Ely, MN.  Originally designed for hunting knives,
I have used it for years and it produces the most beautiful edges imaginable.
Basically, the system consists of a course and fine Arkansas stone set plus
a blade holder which controls the precise sharpening angle.  The instructions
are excellent.  If anyone is interested, I can look up the information at home
and post it to the net.
