They cost between $1.80 and $2.50 a pound, but a pound easily serves two people as there is no waste (or very little). Seems worth the effort unless you are really poor or like to cut up chickens. Merle Ellis' book called something like *The Butcher* (available in paperback) has most of what there is to know about meats, their carving, and their basic preparation techniques.
