1 lb. tripe well cooked, 1 pint fritter batter

	Cut the tripe into pieces 3 inch by 1 inch, dip in the
fritter batter and fry a golden brown in hot fat; drain on
paper, arrange neatly on a hot dish and garnish with fried parsley
