Crepes. 1/2 cup all purpose flour 1 teaspoon sugar 1/4 teaspoon baking powder 1/4 teaspoon salt 2/3 cup milk 1 egg 1/4 teaspoon vanilla 2 teaspoon butter or margerine, melted Beat all ingredients with rotary beater until smooth. For each crepe, lightly butter 8-inch skillet; heat over medium heat until butter is bubbly. Pour scant 1/4 cup batter into skillet; immediately rotate pan until batter covers bottom. Cook until light brown; turn and brown other side. Stack crepes so first-baked side is down. Cool, keeping crepes covered to prevent them from drying out. 4 to 6 crepes. [To recommend this recipe I can say that my wife is a straight disaster with pancakes, but she does one good crepe after another with this recipe.] We have tried fun fillings like peaches and whipcream for the crepes. Does anyone have some fillings without cheese for us? Also a good potato salad recipe would be much appreciated. Thanx. Ralph & Tricia.
