Add the sake, soy sauce, sugar, and sesame seeds, which have been toasted in a dry frying pan and crushed in a suribachi or mortar. Turn down the fire and cook for four or five minutes. Mix the mustard to a paste with a little water and add to the pork. Cook for two or three minutes longer.
