I don't have a specific tofu and snow peas recipe, but here's how I usually
prepare them when I want a separate dish of them.

First, wash and trim the snow peas.  Dump them in boiling water for
about 5 seconds or so, then run cold water of them to stop them from
cooking.  (This step, blanching, is usually required when stir-frying
snow peas.)  Heat some oil in a wok or heavy skillet, and toss in some
minced garlic and some shredded ginger.  (How much, you ask?  Enough to
make the food taste right, I answer.  I like lots and lots.)  Stir-fry
them a bit, then toss in the snow peas.  Stir-fry until the peas turn
bright green.  Sprinkle a bit of hot oil on, mix it all up, and serve.
