Ox tongue, 6 peppers, 6 cloves 1 teaspoonful herbs.

	Wash the tongue and put in a saucepan with the seasoning,
well cover with cold water, bring to the boil and simmer gently
till cooked about 3 1/2 hours.  Take out of the saucepan, remove
the skin, shape into a curve and keep in a position with skewers
drive through it into the board.  When cold, glaze and trim it,
and garnish with parsley.
