Hi everyone.
I decided to give an old Performa 5300 a go.
the built in monitor comes up and a disk with a question mark that keeps
flashing.
I tried holding down the option key when booting up to see If it would give
me boot up choices, but just the same.
Does anyone remember other boot option commands? It was running system 7 or
8, I can't remember.

That means it cannot find a bootable System.
It's either the hard disk is dead, or there's no bootable System on it.

I can't remember if option-boot was already working at the time.
If you have them handy, you could try inserting a System floppy disk, or a
System CD.
To boot from CD, you need to keep pressed the "C" key on the keyboard while
starting up the Mac.

Keep in mind not all of them will be working on such an old Mac.

Disk with question mark is ‘I cannot find a bootable volume’ Either dead drive, or boot sectors are messed up.
Folder with a question mark is ‘I found a bootable volume, but no blessed system Folder’
If you can scrounge up one of these https://www.newegg.com/Product/Product.aspx?Item=9SIA1HE0JE6 610> (or just buy that one :-) you can pull the drive from the performa to check it out.
Those are very hand little tools to have around to diagnose drive issues.

IIRC, sometime a system folder can be re-blessed by simply removing he System then putting in back into the Sys folder..

The System Suitcase.
Yes, that’s actually the official means of re-blessing the System folder, now I recall. I only ever had that happen once or twice though; more often than not the issue was a corrupted System or boot volume.
It was SO much nicer when OSX came along with a much more solid OS base; the old OS had pretty much reached the point of total collapse under the weight of all the kludges.
