I don't think the installers erase unless asked, but others will know that
for sure.
However, you can usually just swap in a different system folder, bless it,
and reboot, so that's another option. It does require enough disk space to
swap things around, though.

Yes. Same with System 7.1 Pro, System 7.5, and all the way through Mac OS 9.2.2, if you wind up migrating a filesystem from Mac to Mac as you upgrade the OS that’s on that filesystem.
In fact, you can theoretically keep migrating like that all the way through macOS 10.14 without anything being wiped out or erased; 68K apps will stop working after installing Mac OS X 10.0, and same with PowerPC apps after installing Mac OS X 10.6, but they’ll still exist in the filesystem.

Yes, but do NOT do a "CLEAN" install, do not format the hard drive, etc.

Just unbless the old system folder, and add the new one. They can both stick around so that you can go back and forth.
I remember that there *was* a reason to use 7.0 at times, but I can’t remember what it was :( Perhaps that I jumped to 7.1 on the alpha release over being able to select files with keystrokes? I know that I had to flip between 6 & 7 for quite some time . . .
