Not A][ related yet, but... what scale? Will you be getting full
layouts, or just cars, locos, and track?

Look for DAC (digital to analog converter) cards or X10? Home Control systems to control switches (for power on/off, train-track switching, red/green-light switching, and such).

From a hardware perspective, I think you’ll want a bunch of bits of
parallel I/O, for PWM or relay “outputs” and opto-isolated inputs. You may
find a use for analog inputs or outputs, but they are less essential.

Engine (and other actuator) speed control is best done with PWM, assuming
that things are DC powered. AC control beyond on/off is more problematic.

I’m sure you’ll find many examples. After all, the roots of the MIT AI Lab,
the home of the early hackers, was the model railroad club!
