the easiest way would be with a print spooler device... all the computers are
connected to its inputs and the output goes to the printer... it would handle
all the traffic as needed... there are even some that can handle multiple
printers as well as multiple computers...

I found PDF's for 2 Star Micronics printers that You may want.
I couldn't find the one for a Star Gemini NX-1000 printer but maybe
one of these will help You.

For the NX-1000:

I looked a bit at both of those printer manuals and didn't see neither one
having a Commodore Connector Jack on them.

I use a Xetec Super Graphix interface between a C=64 and Epson Printer.
The book shows switch settings to use a Gemini 10X, 15X or SG-10 .
The book was printed in 1986, the NX-1000 users manual is dated 1987
but I'd guess the switch settings for the Gemini 10X would be the same.

If You used the Xetec interface You would have to move the two
connectors that come with it to the C=64 You wanted to print from.

Later I got a A-B-C-D Switch Box and some cables to use the Epson
printer with either the C=64 PC or a 486DX33 Computer running DOS 5.0 .
But that idea wouldn't help with Your 3 C=64 PC's.
