Check out the Lexmark network laser printers.
I was up and printing to our C544DN from system 7.5 within moments of plugging it in.
Looks like this model has been replaced with the CS410DN, but specs suggest it still supports Appletalk.
The C544 prints fine, but needs new toner far too often.

Wow, I had no idea that anyone was still making printers with
AppleTalk support. That would be great for businesses who are still
using older Macs, I know there are still a few out there.
